One dough, a different tool every time
Shanxi noodles are usually listed by name, which hides the one thing that explains them: the tool. This atlas sorts twenty-two local noodles by blade, rolling pin, thumb, chopstick, press, grater and steamer, and gives the flour, the gravy it normally meets and the bite it is aiming for. Eight gravies are set out separately, with the noodle each one actually holds.
